Apple Onion Soup Gratin
Ingredients

3 tablespoons butter
1 Golden Delicious apple, peeled, cored, and chopped
1 1/2 cups chopped onions
1 can (14 1/2-ounce) beef broth
1 1/2 cups water
1/2-cup sherry
1 teaspoon dried basil
4 slices French bread
1/2 cup shredded Swiss cheese

Directions
1. In 2-quart microwave-safe bowl, microwave butter on high (100 percent) 1 minute or until melted. Add apple and onion; microwave on high 5 minutes. Stir and microwave on high 5 minutes longer or until apple is tender and onions are softened. Add broth, water, sherry, and basil. Microwave on high 15 minutes, stirring every 5 minutes.

4. Heat broiler of conventional oven; toast slices of bread on both sides. Ladle hot soup into each of 4 oven-safe crocks; top each with toasted bread and some cheese. Broil until cheese melts and browns slightly; serve hot.

Spicy Chicken and Apple Salad
Ingredients

1-pound boneless, skinless chicken breasts cut into 1/2-inch strips
3 tablespoons fresh lime juice, divided
2 tablespoons olive oil, divided
2 cloves garlic, minced
2 teaspoons ground cumin
1-teaspoon chili powder
1/2-teaspoon salt
2 teaspoons water
1-teaspoon sugar
1/8-teaspoon red pepper sauce
2 tablespoons cornmeal
1-tablespoon all-purpose flour
4 cups mixed salad greens
3 green onions, thinly sliced
1 large Red Delicious apple, cored and julienne

Directions
1. In medium bowl, combine chicken, 1-tablespoon limejuice, 2 teaspoons olive oil, garlic, cumin, chili powder, and salt; set aside 10 minutes. In small bowl, whisk together remaining limejuice, 1-teaspoon olive oil, water, sugar, and hot pepper sauce; set aside.

4. Combine cornmeal and flour in small bowl. Dip chicken pieces in cornmeal mixture, coating all sides. Heat remaining oil in large non-stick skillet over medium heat until hot Add chicken, cook, stirring 5 to 7 minutes or until brown and thoroughly cooked; remove from skillet, drain on paper towels.

7. In large bowl, toss salad greens with reserved dressing. In medium bowl, combine chicken, onion and apple. In large bowl, toss salad with reserved dressing. Arrange salad greens on serving platter; top with chicken mixture. Serve immediately.

Spicy Apple Crepes

FOR FILLING
3 tbsp. butter or margarine
4 cooking apples
1 tbsp. lemon juice
1/2 tsp. grated lemon rind
1/4 tsp. cinnamon
Dash of nutmeg, ginger, coriander
(Any are opt.)
1/3 c. sugar

Peel and core apples. Slice into 1/2-inch slices. Melt butter in small saucepan and add apples and lemon juice, lemon rind and spices. Cook over low heat for 5 minutes. Add sugar and cook until apples are tender. Stir occasionally. Cool slightly. Fill crepes with filling. Can be served with syrup or whipped cream.
