Authentic Mexican Fried Rolled Tacos – Flautas
1 cup finely chopped cooked chicken
12 flour tortillas
Vegetable oil
Spoon one heaping tablespoon of chicken across the bottom of each tortilla.
Roll up tightly; secure with a wooden toothpick. Heat 1 inch of oil
in a heavy skillet. Fry flautas, turning frequently, until brown. Drain
on paper towel. Serve with fresh salsa, sour cream and guacamole.

Authentic Mexican Flour Tortillas - Tortillas de Harina
2 cups all-purpose flour
1 tsp. salt
3 T. lard
1/2-cup water
Cut lard into flour and salt until mixture is uniform, crumbly consistency.
Add water, 1 tablespoon at a time, until all flour is moist and mixture
is easily formed into a ball. Divide ball into 12 equal pieces. Shape
into balls. Cover and let rest for 20 minutes.
Roll each ball on a floured surface into a six-inch circle. Heat a large
skillet over medium-high heat. Cook each tortilla in the un-greased
skillet until edges begin to dry and blisters form. Turn and cook on
the other side until dry. Stack tortillas with wax paper between.

2 to 3 pounds flank steak
1/2-cup limejuice
2 tablespoons olive oil
4 cloves garlic, crushed
Place steaks in a shallow glass or plastic dish mix remaining ingredients;
pour over beef. Cover and refrigerate for at least 8 hours, turning
occasionally. Broil or barbeque beef until brown, approximately 5 minutes.
Cut beef across the grain into thin slices. Serve with tortillas, guacamole
and salsa.
