2 c. persimmon pulp
3-cups flour (recommended unbleached white flour)
1.0 tsp salt
2.5 tsp baking powder
2.0 tsp baking soda
1.5 tsp cinnamon, ground
1.0 tsp nutmeg, ground
1/8 tsp cloves, ground
1.5 cups sugar or fructose, granulated - original called for 2 cups
3.0 large egg whites or egg replaced for 2 eggs
10.0 oz prune puree (I used Gerber1st, baby food in the tiny jars -
4 jars) (prunes & water only) or 1 1/4 c. applesauce
1/2 c. raisins (I left this out)
1 t. vanilla
Serves 20 (for nutritional value purposes below)
Preheat oven to 350 degrees.
Sift dry ingredients into bowl. Beat egg whites or replaced, add to
pulp, then add liquids. Mix dry ingredients into pulp mixture, add raisins.
Pour batter into two well-sprayed loaf pans or one bundt pan. Bake loafs
for about one hour or bundt pan about 40-45 minutes or until done.
Spicy Tomato-Cheese bread recipe
Makes: Makes 20 servings, 1 slice each.
1-1/2 cups KRAFT 2% Milk Shredded Reduced Fat Sharp Cheddar Cheese
4 slices LOUIS RICH Turkey Bacon, cooked, crumbled
1/2 tsp. ground red pepper
2 cups chopped tomatoes
1 loaf (16 oz.) French bread, cut into 20 slices
MIX cheese, turkey bacon and pepper. Place bread slices on baking sheet.
Top evenly with tomatoes; sprinkle evenly with cheese mixture. Bake
bread at 350°F for 10 minutes or until cheese is melted.
Spicy Brown bread recipe
3/4 c AM Blue Cornmeal
3/4 c AM Whole Wheat Pastry flour
2 tsp. Non-alum baking powder
1/4 tsp. Sea salt (optional)
2 tbs. Carob powder
1/2 tsp. Cinnamon
1/2 tsp. Ginger
1/2 tsp. Nutmeg
3/4 c Milk or soymilk
1/2 c unsulphured molasses
1 tsp. Lemon extract
Combine dry and liquid ingredients in separate bowls, and then stir
together until smooth. Batter seems thin but it will thicken. Pour batter
into oiled pan. Bake at 350 F. for 20 minutes or until knife test proves
done. This recipe will make 6 large cupcakes or one 8-inch square pan
