Fiery Hot Chili Recipe
Ingredients:
5 pounds of ground beef or cubed stew beef
3 large cans of tomato sauce
2 large cans of tomatoes- diced
3 large cans of kidney beans or chili beans
1 large onion diced
1 large can of tomato soup
1 small bottle of ketchup
1 stick of oleo
1 bottle of chili powder
Garlic salt or 1 clove of garlic diced
Salt
Pepper
6 drops of Pyro Diablo
Directions:
Fry hamburger and onions. Drain the grease. Add the tomatoes, tomato
sauce, tomato soup, garlic, and kidney beans to hamburger or cubed beef.
Add Chili powder and Pyro-Diablo to taste. Use Extreme Caution when
adding Pyro-Diablo. Add to chili one drop at time until desired level
of heat has been achieved. Let simmer. For the creamier chili add one
stick of margarine

Texas Beef Chili
2 lb beef chuck or shin, in 1/2" cubes
8Tbs. olive oil
5Tbs. med-hot chili powder
1lb Spanish chorizo sausage, sliced 1/4" thick
3 medium onions, chopped
8 garlic cloves
1 T oregano, preferably Mexican, crumbled
2 tsp cumin, ground
2 tsp salt
1 tsp Fresh ground pepper
4 lb canned Italian plum tomatoes, drained and chopped
24 oz beer, Mexican beer
6 oz tomato paste
Toss meat with 3 T. olive oil and 2 T. chili powder in non-aluminum
bowl. Let stand in refrigerator overnight.
Heat 3 T. oil in large, heavy skillet over med-hi heat. Brown the meat
in batches (do not crowd) on all sides, about 5 minutes. Transfer to
a large pot, using slotted spoon. Add chorizo to skillet and brown well.
Transfer to pot using slotted spoon. Reduce heat to
med-lo. Add more oil to skillet, if necessary. Add onions and cook until
translucent, about 10 minutes. Add garlic, chili powder, oregano, cumin,
salt and pepper. Stir 3 minutes then transfer to pot. Stir in tomatoes
beer and tomato paste. Bring to a boil then
reduce heat. Cover and simmer until meat is very tender, stirring occasionally,
about 3 hours. Uncover during last hour if necessary to thicken liquid
into sauce. Some good accompaniments are pinto beans and salsa as side
dishes.

Just Plain Good Chili Recipe
3 medium onions, finely chopped
2 medium green peppers, finely chopped
3 stalks celery, finely chopped
8 lbs coarsely ground beef
1-can (6oz) tomato paste
2-can (1lb-13oz) cans stewed tomatoes
2-can (1lb) tomato sauce
1-can (7oz) chile salsa
3 cloves garlic, finely chopped
2 jar (3oz) chili powder
1 medium jalapeno chili, seeded and chopped
2 Tbs. salt
Oregano garlic salt coarsely ground pepper Oil
Thinly cover bottom of heavy 2 gal pot with oil. Sauté onions,
green peppers and celery 10 min.. Add meat and cook 10 min or until
brown. Stir in tomato paste, stewed tomatoes and tomato sauce. Add chopped
garlic, chili powder, salt, dash oregano, Chile salsa and jalapeno.
Cook 30 min; season to taste with garlic salt and pepper, and then simmer
2 1/2 hours. Stir every 10-15 min.
