Hot and Spicy Sloppy Joe’s
Servings: 16

1-1/2 pounds Ground beef or Turkey
1 large onion -- chopped (1 cup)
1 clove garlic -- minced
6 ounces can hot-style tomato juice
1/2 c catsup
1/2 c water
2 TB brown sugar
2 TB chopped canned jalapeno pepper
1 TB prepared mustard
2 teaspoons chili powder
1 teaspoon Worcestershire sauce
8 hamburger buns
Sharp Cheddar Cheese Shredded

In a large skillet cook ground beef, onion, and garlic till meat is brown and onion is tender. Drain off fat. Meanwhile, in a 3 1/2 or 4 quart crockery cooker, combine tomato juice, catsup, water, brown sugar, jalapeno peppers mustard, chili powder and Worcestershire sauce. Stir in meat mixture. Cover; cook on low heat setting for 10-12 hours or high heat setting for 3-5 hours. Toast buns; spoon meat mixture over buns and sprinkle with cheese. Serves 8. For 5 or 6-quart crockery cooker: Double all ingredients. Prepare as above.

Lentil Chili

2 lbs. Lentils
Water, pre-heated
3 Chipotle Peppers, stems removed
5-6 Cloves Garlic, crushed
1 Onion, large, diced (approx. 2 cups)
2 Tbsp. Cumin, ground
2 Tbsp. Chili Powder
1 Tbsp. Basil, dried
1 28-oz. Can Tomatoes, crushed
1 6-oz. Can Tomato Paste
1 lb. Corn, kernels, frozen
1 cup Bell Pepper, diced

We prepare our lentil chili in a 6-1/2 quart slow cooker (crock pot) to ensure that the lentils are soft and the flavors are thoroughly blended. It takes about 6 to 8 hours to finish cooking. We usually start making our lentil chili early in the morning so that it is ready for late afternoon or evening. If you are using a smaller slow cooker, cut the recipe in half. Begin by pre-heating 6 cups of water to boiling and pour into the slow cooker, which is set on "high." Clean and rinse the lentils. Add to the Crock Pot.

Place the chipotle peppers in a blender container with 1 cup of water. Peel the garlic and add to the blender. Cover and run blender at high speed until the peppers and garlic are pureed. Heat this mixture in a microwave oven or stovetop till boiling. Pour the contents of the blender container into a heat resistant pot or bowl, rinse the blender container with another cup of water, and heat the liquid to boiling. Add to the crock-pot
onions, bell pepper, add to crock-pot.
Heat the frozen corn with the crushed tomatoes and tomato paste until hot, and add to the crock-pot. Add the seasoning. If you prefer your lentil chili more like soup (thinner), add additional hot water, as desired.

Crockery Minestrone Soup!

1 large onion, chopped
2 large carrots, chopped
2 ribs celery, chopped
1 cup cabbage, chopped
1 medium zucchini, chopped
1 can stewed Italian tomatoes
1 can green peas
1 can kidney beans
1 can chicken broth
4 beef bouillon cubes
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried basil
1 Tablespoon dried parsley
1 clove garlic, chopped
1 bay leaf
1 pound Italian sausage, browned, drained
1-1/2 cup Dilanti noodles or other small pasta, cooked and drained according to package

Place all ingredients except pasta in crockpot. Add about 2 cups. Cook on low 6-8 hours. Add pasta 20 minutes prior to serving. Cook on low until pasta is desired texture. Serve with fresh grated Parmesan or cheese on top.
