Mocha Fondue
Ingredients
1 4-ounce package sweet baking chocolate, broken up
4 ounces semisweet chocolate, chopped
2/3 cup light creams or milks
1/2 cup sifted powdered sugar
1 teaspoon instant coffee crystals
2 tablespoons coffee liqueur
Assorted fruits (such as star fruit slices, pineapple chunks, kiwi fruit wedges, strawberries, pear slices, banana slices)
Meringue cookies

In a heavy saucepan combine chocolates, cream, sugar, and coffee crystals. Heat and stir over low heat till melted and smooth. Remove from heat; stir in liqueur. Pour into a fondue pot; keep warm over low heat. Serve with fruit and cookies.

Hot Tamale Fondue
1 cans tamales
1/2 medium onion, finely chopped
1 cans no-beans chili
8 ounces Velveeta cheese, sliced

Slice tamales into medium saucepan. Add chili. Add chopped onions. Heat slowly, stirring occasionally, so as not to scorch. When hot, add sliced cheese. Stir until cheese is melted. Keep warm in a fondue pot.
Serve with corn chips.

Spicy Chicken Fondue
6 boned and skinned chicken breasts
4 tablespoons oil
2 teaspoons paprika
1/2 teaspoon chili powder
1 tablespoon oil
1 onion, finely chopped
2 teaspoons mild curry power
3 teaspoons flour
1 1/4 cups milk
6 teaspoons mango chutney
Salt and pepper

Cut chicken into 3/4-inch pieces and mix with oil, paprika and chili powder. Place chicken on a serving plate. To make curry sauce, heat oil in a saucepan. Add onion and cook until soft. Stir in curry powder and cook for 2 minutes then stir in flour. Gradually stir in milk and bring slowly to a boil stirring all the time. Continue to cook until sauce thickens. Simmer for 5 minutes, then add chutney and season with salt and pepper. Serve hot with the chicken cooked in the hot oil.
Serves 4 to 6.
