Jamaican Pork Chops With Tropical Fruit Salsa
Prep Time: 20 minutes Cook Time: 30 minutes Marinate Time: 1 hour
2/3 cup prepared Italian salad dressing
1/3 cup frank's red hot sauce
1/3-cup limejuice
2 tablespoons brown sugar
2 teaspoons dried thyme leaves
1-teaspoon ground allspice
1/2-teaspoon ground nutmeg
1/2-teaspoon ground cinnamon
6 loin pork chops, cut 1 inch thick (2 1/2 pounds)
Place salad dressing, frank’s red hot sauce, limejuice, sugar
and spices in blender or food processor. Cover and blend until smooth.
Reserve 1/2 cup dressing mixture for Tropical Fruit Salsa. Place pork
chops in large reseal able plastic food storage bag. Pour remaining
dressing mixture over chops. Seal bag and marinate in refrigerator 1
hour.
Grill pork chops over medium heat 30 minutes or until pork is juicy
and barely pink in center, turning often. Serve chops with Tropical
Fruit Salsa. Makes 6 servings
Tropical fruit Salsa
1 cup finely diced fresh pineapple
1 ripe mango, peeled, seeded and finely chopped
2 tablespoons minced red onion
1 tablespoon minced cilantro leaves
Combine pineapple, mango, onion, cilantro and reserved 1/2 cup dressing
mixture in small bowl. Refrigerate until chilled. Makes about 2 1/2

Spicy Thai Satay Dip
Prep Time: 10 minutes
1/3-cup peanut butter
1/3 cup Honey Dijon Mustard
1/3-cup fat free chicken broth
1 tablespoon chopped peeled fresh ginger
1-tablespoon sucralose sugar substitute
1 tablespoon frank's red hot sauce
1-tablespoon teriyaki sauce
1 tablespoon grated orange peel
2 cloves garlic, minced
Combine all ingredients in large bowl. Cover and refrigerate. Serve
with vegetables, chips or grilled meats. Makes 1 cup dip

Buffalo Burgers
Prep Time: 5 minutes Cook Time: 10 minutes
1/4 cup frank's red hot sauce
1/4 cup blue cheese or ranch salad dressing
1 1/2 pounds ground beef
Salt and pepper to taste
Lettuce leaves
4 tomato slices
4 large Kaiser or hamburger rolls, split and toasted
1/2 cup crumbled blue cheese
Prepare Buffalo Dressing, combine Frank's Red-Hot Sauce and salad dressing;
set aside. Season beef with salt and pepper to taste. Shape into 4 burgers.
Grill or broil about 10 minutes for medium rare. Place lettuce, tomato
slices and burgers on bottom of rolls. Top with blue cheese and Buffalo
Dressing. Makes 4 servings
