Carne Asada
Carne Asada is a great Mexican recipe for marinated; grilled beef serves
up in tortillas. This is not your Father's Taco. This is a flavorful
and delicious meal that is great for any occasion.
2 pounds flank steak
12 flour tortillas
1/2-cup tequila
1/4-cup limejuice
1/4 cup lemon juice
1/4 cup orange juice
4 cloves garlic crushed
1 medium onion chopped
1-teaspoon black pepper
1-cup salsa
1-cup guacamole
1-teaspoon Tabasco
Mix juices, garlic, onion, tequila, Tabasco and pepper in a bowl. Add
meat and marinate both sides. Cover and refrigerate, turning meat over
occasionally. Let sit for 4 hours or more. Preheat grill. Place a few
drops of water on each tortilla, stack and wrap in aluminum foil. Place
on grill. Remove meat from marinade, reserving marinade. Place on grill.
Turn steak and tortillas once during cooking. Brush steak with remaining
marinade. Cook to your liking (12 to 15 minutes for medium-rare). Cut
into thin slices. Place a few slices of steak on each tortilla with
salsa and guacamole and serve.

Grilled London Broil
This is a good, old English style London broil recipe that has lots
of flavor and give you a tender cut of steak.
1 1/2 to 2 pounds flank steak
1/2-cup butter
1/4-cup beef broth
1/4 cup dry red wine
2 tablespoons oil
2 tablespoons minced fresh parsley
2 cloves garlic, minced
1 tablespoon red wine vinegar
1 tablespoons minced scallion tops
1 teaspoon Worcestershire sauce
Salt and pepper to taste
Cut 1 inch diamonds about 1/8 inch deep into both sides of the flank
steak. Rub with minced garlic and place in shallow baking dish. Lightly
coat with oil vinegar and salt and pepper Let sit at room temperature
for about 30 minutes. While that's sitting, melt butter and mix together
with beef broth, wine, Worcestershire sauce, parsley and scallions.
Keep warm until ready to serve. Grill steak about 4 to 5 minutes on
each side. Don't over cook or it will get tough. Remove from grill and
cut into thin strips. Serve with sauce

Indian Beef Patties
Makes 2 servings Prep: 15 minutes Grill: 14 minutes
Ingredients
1/2-cup plain low-fat yogurt
1/3 cup chopped, seeded cucumber
1/4 cup finely chopped onion
1 medium fresh jalapeno pepper, seeded and chopped, or 2 tablespoons
canned diced green chili peppers
1 tablespoon snipped fresh mint or 1 teaspoon dried mint, crushed
1/2-teaspoon ground cumin
1/2 teaspoon bottled minced garlic or 1/8 teaspoon garlic powder
1/4-teaspoon salt
8 ounces lean ground beef, pork, or turkey
Directions
For sauce, stir together the yogurt and cucumber in a small bowl. Cover
and refrigerate until ready to serve. Combine the onion, jalapeno pepper,
mint, cumin, garlic, and salt in a medium bowl. Add the ground meat;
mix well. Form mixture into two 3/4-inch-thick patties. For a charcoal
grill, place patties on the grill rack directly over medium coals. Grill,
uncovered, for 14 to 18 minutes or until an instant-read thermometer
inserted into the center of the patty registers 160 degree F, turning
once. For a gas grill, preheat grill. Reduce heat to medium. Place patties
on the grill rack; cover and grill as directed in step serve the patties
topped with yogurt-cucumber sauce. Makes 2 servings
