Spicy Grilling Chicken

Ingredients:
4 chicken breast -- boned & skinned
3/4-cup salsa -- divided
3/4 cup Italian salad dress -- divided
4 slices mozzarella cheese

Instructions:
In plastic bag combine 1/4 cup each of salsa and Italian dressing; add chicken. Marinate for 1 to 2 hours in refrigerator. Remove chicken and discard marinade. Heat remaining salsa and dressing. Place chicken on gas grill over medium flame cooking 5 to 8 minutes per side. After turning chicken, top with cheese and cook until melted. Serve over rice or pasta and top with heated sauce.

Bucket Of Grilled Crawfish

Ingredients:
15 pounds crawfish
4 ears corn
15 red bliss potatoes -- cut in half
4 lemons -- cut in half
10 pounds seaweed -- dipped in ocean water

Instructions:
Build a fire and cover with sandstone rocks. Cover with seaweed. Cover with chicken wire. Cover with crawfish and potatoes. Cover with corn and lemon halves. Cover with more seaweed. If seaweed dries out during cooking pour ocean water on top.

Grilled Swordfish With Citrus Salsa

2 6 ounce swordfish steaks
1 teaspoon Creole spice
3 6 inch corn tortillas -- -cut --into 1" thick strips
Salt and pepper
1/4 cup orange sections, -- zested before cut
2 tablespoon lemon sections, -- zested before cut
2 tablespoon lime sections, -- zested before cut
1 tablespoon shallots -- minced
1 tablespoon olive oil 1 tsp honey
1 tablespoon cilantro – chopped

Preheat the grill and the fryer. Season the fish with the spice. Place on the grill. Fry the tortilla strips in the fryer for 3 minutes, drain and season with salt and pepper. (You want the strips to be sort of crumbled up as they fry, they will be the nest for the fish to sit on.) In a small bowl, combine the sections, shallots, zest, olive oil, honey, and cilantro. Season with salt and pepper Remove the fish from the grill. Set up a nest with the tortilla strips and place the fish on top. Top with the salsa
