Ham and Asparagus Roll-Ups
Melt 2 tablespoons butter in a saucepan over low heat;
stir in the flour and salt. Gradually stir in milk; cook, stirring constantly,
until thick and smooth. Add cheese; stir until melted. Using 8 slices
of boiled ham, wrap about 5 or 6 asparagus spears with a slice of ham,
then place in a baking dish. Repeat with remaining ham and asparagus.
Place in a 375° oven and heat for about 10 minutes, until heated
through. Pour cheese sauce over roll-ups to serve. Serves 4.
Ham Cheddar-Chile Cheesecake
Preheat oven to 325 degrees F. Butter a 9-inch spring form pan. Mix breadcrumbs and the 1/4-cup Cheddar cheese. Sprinkle mixture into pan, turning to coat. Refrigerate. Dice about half of ham; reserve remaining slices. Mix diced ham with remaining ingredients in ender or processor until smooth. Pour slightly more than half of filling into prepared pan. Top with reserved ham slices in even layer. Cover with remaining filling. Set pan on baking sheet. Bake for 1 1/4 hours. Turn oven off and cool cheesecake about 1 hour with door ajar. Transfer cheesecake to rack. Remove sides of pan. Cool to room temperature before serving.
Ham and Cheese Storable
Thaw pastry sheet at room temperature for 30 minutes. Preheat oven to 400 degrees F. Mix egg and water and set aside. Unfold pastry on lightly floured surface. Roll into 16 x 12-inch rectangle. With short side facing you, layer ham and turkey on bottom half of pastry to within 1 inch of edges. Sprinkle meat with cheese. Starting at short side, roll up like a jellyroll. Place seam-side down on baking sheet. Tuck ends under to seal. Brush with egg mixture. Bake 25 minutes or until golden. Slice and serve warm.
