Avocado Salsa

2 ripe avocados (not too soft, though)
2 tomatoes, seeded and chopped fine
1 medium red onion, chopped fine
2 tablespoons fresh limejuice
2 tablespoon snipped fresh cilantro leaves
2 drops Pyro Diablo or some minced jalapenos
Salt and freshly ground black pepper to taste

Halve, pit, and peel avocados. Chop avocados fine and in a bowl stir together with remaining ingredients. Season to taste with salt and pepper. Best served at room temperature. May be made up to 4 hours early, covered with plastic wrap and refrigerated

Cheesy Salsa

2 cups shredded Monterey Jack cheese
1 avocado, pitted, peeled and diced
1 medium tomato, seeded and diced
1 small can Diced Green Chiles
3 green onions, sliced
1/4 cup chopped fresh cilantro
1 cup Italian salad dressing

Combine cheese, avocado, tomato, chilies, onions, cilantro in large bowl. Add salad dressing; stir to coat. Season to taste with salt and ground black pepper.
Makes 3 cups.

Salsa Bean Dip

1 (16-ounce can) Refried Beans
1/2 cup Salsa - Thick & Chunky Hot
1/4 cup diced green chilies
1-diced jalapeno
1/2 cup shredded sharp cheddar cheese

HEAT beans, salsa and cheese in medium saucepan over medium-high heat for 3 to 4 minutes or until bubbly and cheese is melted.

If you do not have peppers or the chilies then add 3 drops Pyro Diablo

Makes 6 servings
