Peppery Turnip Fries
Ingredients:

8 medium turnips (about 2 1/2 pounds)
1/2 cup heavy cream
1 teaspoon Splenda
1 teaspoon freshly grated nutmeg or 1/2 teaspoon ground nutmeg
1 teaspoon freshly ground black pepper
1/4 teaspoon salt (sea salt works best)
1/4 cup grated Parmesan cheese
Olive oil spray
Lime juice

Peel the turnips with a vegetable peeler, slice and cut into 2 1/2-by-1/2-inch sticks. Pour 1/2 cup heavy cream into a large bowl and place the turnip sticks into the cream. Fill bowl with cold water until the turnips are completely covered. Add 1 teaspoon Splenda. Swirl a bit to mix and allow to sit in cream mixture for 10-15 minutes. (This cream-soaking step removes the "bite" flavor of the turnips, leaving them with a milder, more potato-like flavor.) Rinse in colander with cool water and pat dry.

Preheat oven to 425°F.
Combine turnip sticks with the nutmeg, pepper, sea salt and Parmesan cheese in a large plastic (Ziploc-type) bag. Seal the bag and shake well to coat the turnip sticks.

Spray 2 large baking sheets lightly with the olive oil spray. Spread the turnips in a single layer on the sheets and spray again with the olive oil.

Bake in a preheated 425°F oven for 15 minutes. Turn the fries over and continue baking for 15 minutes, until the fries are tender and golden in color. Serve hot with a sprinkle of lime juice. This is a great low carb recipes

Makes 8 servings. Approximately 4.5 carbohydrate grams per serving.

Tuna Un-Casserole
Ingredients: 1 teaspoon olive oil
6 ounces tuna, canned -- drained well
1 stalk celery -- finely diced
2 tablespoons onion -- finely diced (2 to 3)
2 ounces heavy cream
1 tablespoon water
handfull of shredded cheddar cheese
salt and pepper to taste

How To Prepare: In a non-stick skillet, sautee onion and celery in oil until just barely
soft(3-4 minutes). Add cream and water and warm through, then add tuna
and warm through again. Season and add cheese -stir and continue to cook until cheese is melted. That?it!
If you wanted this a little tangier, add just about 1tsp Dijon mustard with
the cream. For a slightly richer taste, add 1T softened cream cheese or
mayonnaise with the cream.
If you're missing noodles, stir in some parboiled zucchini ribbons.

Cajun Fish
Ingredients: 1 1/2 pounds flounder fillets -- or other white fish
14 1/2 ounces tomato sauce
1/2 small green bell pepper -- sliced thin
2 cloves garlic -- minced
1/2 cup onion -- sliced thin
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1 pinch cayenne pepper
1 each salt and pepper -- to season fillets

Heat oil in a large skillet and sauté garlic, bell pepper and onion until limp and very fragrant. Remove veggies and add fillets. Let sauté for 2 minutes, then turn. Add veggies and remaining ingredients over fish, cover and reduce heat to low and let simmer for 15 minutes. Carbs per serving 4 total recipe
