Pepper Steaks

2 green bell peppers, seeded and sliced in strips
1 red bell pepper, seeded and sliced in strips
2 tablespoons olive oil
1 1/2 pounds chuck steak fillets, blade steaks, or tenderized round steak
1-cup water
1 teaspoon Italian herb seasoning
1-teaspoon salt
1/4 teaspoon ground black pepper

In a heavy skillet, sauté peppers in olive oil. Remove peppers; set aside. In same skillet, cook steak for about 5 minutes on each side, or until done. Slice steak and arrange on a hot platter with peppers. Stir water, Italian herbs, salt, and pepper into the hot skillet, stirring and scraping to get the dregs (brown bits from cooking meat). Boil to reduce to about 1/3 to 1/2 cup. Pour over beef and peppers. Serve with hot cooked rice. Serves 6.

Chinese Pepper Steak
Yield: 6 servings

Ingredients
1 lb Top round steak, OR Boneless sirloin, (1 to 1-1/2 lbs)
2 tbsp Oil
1 med. Clove garlic, minced
1 tsp. Salt
1 c Beef broth, or bouillon, canned and undiluted
1 c Green pepper, cored, - seeded, cut in thin strips
1 c Celery, thinly sliced
1/4 c Onions, thinly sliced
1/2 c COCA-COLA
2 med Tomatoes, ripe
2 1/2 tbsp Cornstarch
1/4 c COCA-COLA
1 tbsp Soy sauce
Rice cooked and hot


Trim all fat from the meat and cut into pencil-thin strips. In a deep skillet or Dutch oven, heat oil, garlic, and salt. Add the meat and brown over high heat, about 10 minutes, stirring occasionally with a fork. Add the beef broth. Cover and simmer for 15 to 20 minutes, or until the meat is fork-tender.

Stir in the green pepper strips, celery, onions, and 1/2 cup of Coca-Cola. Cover and simmer for 5 minutes. Do not overcooked the vegetables should be tender-crisp. Peel the tomatoes, cut into wedges, and gently stir into meat. Blend cornstarch with the 1/4 cup of Coca-Cola and the soy sauce. Stir mixture into the meat and cook until sauce is thickens, about 1 minute, stirring lightly with a fork. Serve over hot rice.
Makes 6 (3/4 cup) servings.

Grilled Red Pepper Steak & Veggies Recipe:

1 well-trimmed boneless beef top sirloin steak, cut 1 inch thick (about 1-1/4 pounds)
1 clove garlic, cut in half
1/2-teaspoon salt
1/2-teaspoon pepper
2 tablespoons hot pepper sauce
2 tablespoons crumbled blue cheese
Fresh celery leaves (optional)

For Grilled Vegetables:
2 large red bell peppers cut lengthwise into quarters
1 medium red onion, cut crosswise into 1/2-inch thick slices
1-tablespoon olive oil
1/2 to 1 teaspoon hot pepper sauce
Salt and pepper

Rub both sides of beefsteak with cut sides of garlic; sprinkle evenly with 1/2 teaspoon each salt and pepper. Spread 1-tablespoon pepper sauce on each side of steak.
Place steak in center of grid over medium, ash-covered coals grill steak, uncovered, 17 to 21 minutes for medium rare to medium doneness, turning occasionally.

Meanwhile brush bell peppers and onion lightly with 1/2 of oil; Arrange around steak toward outer edge of grid. Grill vegetables 12 to 15 minutes or until tender, turning once.
Separate onion slices into rings; cut pepper quarters into thin slices. Place in medium bowl with remaining oil. Season with pepper sauce, salt and pepper, as desired; toss to coat. Carve steak into thin slices; arrange on platter. Sprinkle with cheese. Arrange vegetables around beef. Garnish with celery leaves, if desired. 4 servings

Broiling Note: Place steak in center of rack in broiler pan so surface of beef is 3 to 4 inches from heat. Arrange oiled vegetables around steak. Broil steak 16 to 21 minutes for medium rare to medium doneness, turning once. Broil vegetables 14 to 16 minutes, turning once.

Pepper Steak

1 1/2 lb round steak
1/2 cup catsup
1 1/2 tbsp. flour
1 tsp. beef base mixed in 3 tbsp. of water
2-3 sliced green peppers
1/4 - 1/2 cup water
1 onion thinly sliced
1 (4 oz.) can mushrooms
2 tbsp. soy sauce
Salt and Pepper to taste

Cut steak in strips. Lightly brown in a hot skillet. Remove meat; add catsup, flour, base, soy sauce and water to the skillet. Simmer 5 minutes. Return meat to pan, cover and cook over low heat until steak is tender (about 1 hour), adding more water if needed. Add salt, pepper, onion slices, mushroom and pepper slices. Cover and steam until vegetables are tender. Serve over steamed rice.

Pepper Steak with Rice

Makes 6 servings

3 cups hot cooked rice
1 pound lean beef round steak cut 1/2 inch thick
1 tablespoon paprika
2 tablespoons butter or margarine
2 cloves garlic, crushed
1 1/2 cups beef broth
1 cup sliced green onions including tops
2 green peppers, cut into strips
2 tablespoons cornstarch
1/4 cup each water and soy sauce
2 large fresh tomatoes, cut in eighths

While rice is cooking, pound steak to 1/4 inch thickness. Cut into 1/4 inch wide strips. Sprinkle meat with Paprika and let stand while preparing other ingredients. Using a large skillet, brown meet in butter. Add garlic and broth. Cover and let simmer 30 minutes. Stir in onions and green peppers.

Cover and cook 5 minutes more. Blend cornstarch, water, and soy sauce. Stir into meat mixture. Cook, stirring, until clear and thickened - about 2 minutes.

Add tomatoes and stir gently. Serve over beds of fluffy rice.

Venison Pepper Steak w/ Noodles

2 lbs cubed venison
2 cups barbecue sauce
1-cup honey
1 tsp garlic powder
4 cups of noodles
6 diced cayenne peppers
6 diced jalapeno peppers
1 large onion (diced
1 1/2 cup of sliced mushrooms
1 tbsp butter

Cut 2 lbs of venison into 1-inch cubes brown in 12-inch skillet with butter or shortening. Add mushrooms, diced onion and garlic powder. Mix barbecue sauce, honey, cayenne and jalapeno peppers in a large bowl. Pour sauce in skillet and cook until meat is thoroughly cooked, stirring occasionally. Boil noodles. Serve steak and sauce over noodles.
