Portuguese Pickling Spice

1 c. dry red wine
1/4-c. oil and 1/4 c. wine vinegar
1 tsp. salt
1/2 c. chopped onion
1 tbsp. pickling spice
4 whole cloves

Mix all together and marinate at room temperature.

Pickling Spice

2 tbsp. Mace blades
1 tbsp. Allspice berries
1 tbsp. Whole cloves
2 Cinnamon sticks (3") Broken into small pieces
12 Black peppercorns
1 dried bay leaf; crumbled

In a small bowl, mix all ingredients. Store in a small, airtight jar up to 2 months.

2 oz ginger
1 3/4 oz yellow mustard seed
1 1/2 oz cloves
2 1/4 oz black pepper
1 1/2 oz bird chilies
3/4 oz mace
3/4-oz coriander seeds
3 1/2 oz allspice

Leave spices whole. Use for chutneys, pickled fruits and vegetables, and to spice vinegar. Tie in a small muslin bag and remove after pickling, or add straight to vinegar, depending on the type of pickle.
