Homemade Pickling Spice Mix

1/2-Cup Whole Allspice
1 Cup Mustard Seeds
1/2 Cup chopped/dried ginger root (Omit if you do not like Ginger flavor)
1/2 Cup black peppercorns
1/2 Cup (Crushed) cinnamon sticks
12 (Crushed) (Dried) bay leaves
1/2-Cup whole cloves
6 (Crushed) (Dried) hot peppers
1/2-Cup dill seeds
1/2 Cup mace
1/4-Cup cardomon seeds
3/4 Cup (Ground) corianders
1 Tablespoon (Ground) nutmeg

Mix all of the spices and put into a dark glass jar, with a tight-fitting lid.
Best stored in a cool/dark place.

Pickling Spice With Cayenne (English)

2 1/2 pounds mustard seed
2 pounds cayenne pods
2 1/2 pounds common black peppercorns
1 1/2 pounds white peppercorns
1-pound small cloves
3 pounds pimento [allspice]
1 1/2 pounds Jamaica ginger

An English mixture of whole spices, used for chutneys, pickled fruits and vegetables, and to spice vinegar. The spices can either be tied in a small muslin bag and removed after pickling, or added straight to the vinegar, depending on the type of pickle.

3/4 lb mace
3/4 lb coriander seed
3 1/2 lb pimento [allspice]
