Shrimp & Grits

3 cups white wine
1 tsp. salt
2 sticks celery
1 tsp. celery seed
1 clove garlic
1 tsp. dill seed
1 bunch basil

GRITS:
2 1/2 cups milk
1/2 cup reg. grits
1/2 cup Cheddar cheese, grated
Garlic, salt and pepper to taste

SHRIMP:
2 large onions, diced
4 oz. olive oil
2 lbs. sm. shrimp, peeled and deveined

Bring marinade to boil, cool and chill. Marinate raw shrimp for 4 hours. For grits bring milk to boil. Add grits and cook until soft. Add cheese and season to taste. Sauté shrimp in olive oil and onions. Serve shrimp over grits.Servings: 6

Shrimp Scampi

1/2 c. butter
2 garlic cloves, chopped
2 Tbsp. lemon juice
1 Tbsp. parsley flakes
1/2 tsp. salt
1 lb. medium shrimp, shelled
paprika
In a dish, heat butter and garlic 2 1/2 to 3 minutes at High until melted. Add lemon juice, parsley and salt; stir in shrimp. Heat, covered 5 1/2 to 6 1/2 minutes, stirring once. Let stand in oven, covered for 5 minutes longer. Sprinkle with paprika.

Shrimp Creole

1 lb peeled raw shrimp
2 cups chopped onion
1 cup chopped bell pepper
1 cup chopped celery
1 tsp finely minced garlic
1/2 can cream of mushroom soup
1/2 can cream of tomato soup
1 stick melted margarine
Tony Chachere's to taste

Smother the four seasonings in margarine until it turns clear. Add the two soups stir well. Cook slow for 10 minutes and shrimp and continue to cook for 20 minutes or until the shrimp is done. Add Tony's to taste and serve with cooked rice.
