Stuffed Pepper Meatloaf

1 small green bell pepper
2 slightly beaten eggs
1/2 C. milk
1/2 C. fine dry bread crumbs
1/2 C. shredded American cheese
3 T. catsup
1 tsp. salt
1 tsp. Worcestershire sauce
1/8 tsp. pepper
2 lb. ground beef

Cut top from green pepper; remove seeds and halve lengthwise. Cook, covered, in boiling salted water 5 minutes. Drain and set aside.
Combine eggs, milk, breadcrumbs, cheese, catsup, salt, Worcestershire sauce and pepper. Add ground beef and mix thoroughly. Stuff peppers halves with some of the meat mixture. Pat half the remaining meat in bottom of foil-lined 8 x 4-inch loaf pan. Place stuffed pepper halves, cut side down, on meat. Carefully press remaining meat over and around peppers to make smooth loaf. Bake, covered, at 350ºF for 1 3/4 hours. Uncover; bake 15 minutes more. Spoon off excess fat as it accumulates. Makes 8 servings.

Stuffed Pepper Cups

6-7 medium green peppers, washed and seeded
2 lb. ground beef
1/2 cup onions, chopped
1 T. oil
2 cups tomatoes, stewed
3/4 cup rice, cooked
salt and pepper to taste
2 T. Worcestershire sauce
1 cup sharp Cheddar cheese, shredded
1 T. steak sauce

Place peppers in a stockpot, add enough water to cover and cook approximately 5 minutes. Remove peppers from water and set aside. In a saucepan, brown beef and onions in hot oil, drain. Add tomatoes, rice, salt, pepper, and worcestershire sauce. Cover and simmer until rice is tender. Add cheese and steak sauce; stuff peppers. Place stuffed peppers in a 9"X13" baking dish

Bake at 350 degrees for 25-30 minutes.

Taco-Filled Peppers

1 lb. ground beef
1 package (1-1/4 oz.) taco seasoning mix
1 can (8 oz.) kidney beans, rinsed and drained
1 cup salsa
4 medium green peppers
1 medium tomato, chopped
1/2 cup shredded cheddar cheese
1/2 cup sour cream

Brown ground beef; drain. Stir in taco seasoning, kidney beans and salsa. Bring to a boil; reduce heat and simmer for 5 minutes. Cut a slice off the top of each pepper. Remove seeds. Immerse peppers in boiling water for 3 minutes; drain. Spoon meat mixture into each pepper Place in baking dish Cover and bake at 350 degrees for 15-20 minutes. Serve topped with tomato, cheese and sour cream
